A sprinkling of sugar on top gives these muffins a sweet, crisp crust. (Cooking Light, Jan/Feb 1997, p. 142 revised to eliminate white sugar, salt, wheat flour, and oil. Haven't made, only done analysis)

Recipe Ingredients for Pear-Walnut Muffins (Cooking Light)

1 1/2 cups spelt flour
2/3 cup brown sugar
1/2 cup spelt flour
1 tbsp baking powder
1/2 tsp ground cinnamon
1 1/4 cups pear, finely chopped
1/3 cup walnuts, coarsely chopped and toasted
3/4 cups almond milk
2 tbsp applesauce
1 large egg, lightly beaten

Recipe Directions for Pear-Walnut Muffins (Cooking Light)

  1. Preheat oven to 400

  2. Combine first 6 ingredients in a medium bowl, stir well. Add pear and walnut, toss gently to coat. Make a well in center of mixture, Combine milk, applesauce, and egg, and stir well. Add to flour mixture, stirring just until moist (dough will be sticky).

  3. Divide batter evenly among 12 muffin cups coated with cooking spray. Bake at 400 for 20 minutes or until a wooden pick inserted in center comes out clean. Remove muffins from pans immediately, let cool on a wire rack.
