Contains Lupin Flour to assist lower cholestoral, and provide extra protein, plus oat bran for fibre. Vegans could replace egg and use only egg replacer ( this will also reduce Calorie Count) and substitute rice, soy or other grain milk for milk

Recipe Ingredients for Pear and Walnut Muffin

300 grams Flour
50 grams Oat Bran
100 grams Sugars, Granulated
1 tsp Cinnamon, Ground
1 cup, cubes Pears
1 serving Lupin Flour
1/2 cup Raw Walnuts
0.33 cup Rice Bran Oil
1 large Egg, Whole
1/10 oz No Egg
150 grams 2% Reduced Fat Milk

Recipe Directions for Pear and Walnut Muffin

  1. Place ALL dry ingredients, including egg replacer, in large bowl and mix together to combine and make a well in the centre

  2. Chop pear into small pieces or grate if you prefer ( leave skin on for fibre)

  3. Chop walnuts into small pieces if you like ( or not!)

  4. Add pears and walnuts

  5. Beat egg in a small bowl, add oil and milk - then pour into the mixture

  6. Mix ingredients gently together until combined - add a little extra milk if necessary, DO NOT BEAT.

  7. Divide mixture evenly into 12 muffin tray

  8. Bake in the oven (fan forced 180C = 15 - 20 minutes)
