Recipe Ingredients for Pear and Oatmeal Muffins

1 1/2 cup flour
3 tbsp. rolled oats
3 tbsp. brown sugar
1 teaspoon cinnamon
1/2 teaspoon cloves
1/4 teaspoon nutmeg
1 teaspoon baking powder
1/4 teaspoon baking soda
1 cup yogurt, plain nonfat
2 eggs
1 teaspoon almond extract
1 medium pear, diced

Recipe Directions for Pear and Oatmeal Muffins

  1. NOTE: I found I needed a little more moisture to make it "batter" vs. bread dough, so I added some apple juice (about 1/4-1/2 cup). You could add another pear, mashed up and stirred well into wet ingredients.

  2. Preheat oven to 400 degrees and coat a 12-cup muffin pan with cooking spray. DO NOT USE PAPER LINERS!

  3. In a large bowl, combine the dry ingredients.

  4. In a medium bowl, combine the wet ingredients and diced pear.

  5. Add wet mixture to dry mixture and mix until just combined.

  6. Fill muffin cups two-thirds full with batter

  7. Bake 15 minutes or until tester comes out clean and muffins are lightly browned. Remove muffins from pan and let cool.
