Pear muffins...kind of weird but good.

Recipe Ingredients for Pear Muffins (adapted from Best Life Diet)

1 1/4 cups skim milk
1/3 cup maple syrup
1/4 cup canola oil
1 egg, lightly beaten
2 cups all-bran cereal
3/4 cup Wheat Flour, Whole-grain
1/2 cup all-purpose flour
3/4 teaspoon ground nutmeg
1/4 salt
1 tablespoon baking powder
1 large pear, shredded
1/2 cup prunes
2 tablespoons wheat germ

Recipe Directions for Pear Muffins (adapted from Best Life Diet)

  1. Oven 350

  2. Mix milk, maple syrup, oil and eggs. Stir in All-Bran and let stand 5 minutes.

  3. Mix together dry ingredients. Mix in wet ingredients. Fold in pears and prunes.

  4. Divide batter evenly among muffin pans. Sprinkle each muffin with 1/2 t of wheat germ. Bake 20 to 25 minutes.
