Directions
Combine herbs, salt and pepper in a small bowl. Rub pork medallions on both sides with herb mixture. Heat oil in a large, heavy saute pan or skillet over medium-high heat. Add pork in batches to pan so as not to crowd. Brown nicely on both sides, about 3-4 minutes per side, adding more olive oil if necessary to prevent sticking. Set meat aside and cover to keep warm.

In the same pan, set over medium-high heat, combine reserved pear juice, wine, maple syrup, and currants. Stir to scrape up any brown bits from the bottom of the pan. Add chopped pears. Bring sauce to a simmer, and cook, uncovered, about 8-10 minutes or until sauce is reduced by about one-third. Return meat to skillet and heat through. Adjust seasoning to taste.
