Recipe Ingredients for Pear and Leek Bisque

2 tablespoons olive oil
4 leeks, large, split, rinsed, and thinly sliced crosswise
1 medium potato, pared and cut into 1/2-inch cubes
15 1/2 ounces pear halves in natural juices
8 ounces chicken broth
8 ounces evaporated skim milk
4 tablespoons chives, chopped

Recipe Directions for Pear and Leek Bisque

  1. In a large saucepan, over medium-high heat, saute leeks three minutes.

  2. Add potatoes and sauté for a minute more.

  3. Drain pear liquid into a saucepan with potatoes and leeks, add chicken broth. Bring to a boil and simmer covered for twenty minutes.

  4. Strain soup through a sieve into a large bowl. Place this leek mixture in a food processor, add drained pears, and purée.

  5. Return puréed mixture to the large saucepan and add evap. skim milk and sieved liquids.

  6. Heat soup on medium, stirring often, until soup is hot.

  7. Sprinkle each serving with blue cheese crumbles (opt)and garnish with chives.
