Pear and Gorgonzola Salad Recipe

Love the combination of sweet pears and tangy Feta or gorgonzola cheese.

Recipe Ingredients for PEAR AND GORGONZOLA SALAD

2 pears, large , peeled,cored & thinly sliced  
1/3 c extra virgin olive oil
6 c leaf lettuce
1/4 c. white balsamic vinegar
1/2 walnut pieces
2 tbsp Dijon mustard
1/2 c Feta cheese
1/2 tsp sea salt
1/2 tsp pepper
2 tbsp minced parsley

Recipe Directions for PEAR AND GORGONZOLA SALAD

  1. Loosely chop walnuts and roast on a sheet of aluminum foil at 200 degrees for 20 minutes.

  2. In a large bowl, combine the oil, vinegar, Dijin mustard, salt, pepper. Add the greens, walnuts and cheese crumbles. Toss well.

  3. Stem and core pears, but leave the skin on. Slice very thinly and add to salad. Toss lightly to coat pears in dressing. Serves four to six.
