Pear Crisp from Cooks Illustrated

Recipe Ingredients for Pear Crisp

3 oz pecans
1/2 cup flour (pecans or almonds)
1/4 cup light brown sugar
4 tbsp sugar
1/4 tsp cinnamon
1/8 tsp nutmeg
5 tbsp butter
1 tsp cornstarch
2 tsp lemon juice
3 lbs pears

Recipe Directions for Pear Crisp

  1. Preheat oven to 425.

  2. Melt butter and set aside to cool.

  3. Combine pecans, flour, brown sugar, 2 tbsp sugar, cinnamon and nutmeg in food processor. Pulse until nuts finely chopped.

  4. Drizzle butter over mixture and pulse until resembles wet, coarse sand, scraping down sides of processor in middle.

  5. In large bowl, whisk together 2 tbsp sugar, cornstarch and lemon juice.

  6. Peel pears, halve and core. Then cut each half into 4 wedges and cut each piece in half crosswise.

  7. Toss pears pieces with sugar and lemon juice mixture.

  8. Pour pears into 8-inch square baking dish.

  9. Sprinkle topping evenly over fruit.

  10. Bake for 27-32 minutes, until fruit bubbles around edges and top deep golden brown.

  11. Cool on wire rack until warm, at least 15 minutes.
