When you buy fruit at COSTCO you often have to find ways to use up the rest of the box....we puree the very ripe pears and freeze the n cake size portions - 4 pear is roughly 2 cups of puree.

Recipe Ingredients for Pear cake

1 1/2 c Almond Meal/Flour
1/2 c FLAX MEAL
1/2 c Chia Seed
1 c FLOUR
1/2 c SPLENDA
4 PEARS
1 c BUTTERMILK
1 c oil
3 EGGS
1 1/2 T CINNAMON
1 t allspice
1 t nutmeg
1/2 t cloves

Recipe Directions for Pear cake

  1. Blend mon medium with cake paddle:

  2. 3 eggs, 1 C oil, puree - thawed, all spices, salt, and splenda.

  3. Add soda to buttermilk and stir - then pour all at once into batter mixture.

  4. Stir in sifted flours, seeds, and meal

  5. fill buttred and floured cake pan

  6. bake 350 degrees for 50 min until toughpick inserted in center comes out clean.

  7. Cool: cut into 24 pieces
