Recipe Ingredients for Pear Cake

1 cup chopped walnuts
1/2 cup olive oil
2 cups flour
1 1/2 cups brown sugar
1/2 tsp baking soda
1/2 tsp cinnamon
2 eggs
4 cups pears

Recipe Directions for Pear Cake

  1. Preheat oven to 325 degrees F.

  2. Toast the walnuts until they have a smoky flavor. Chop them up in a food processor.

  3. Mix together dry ingredients: flour, sugar, baking soda, nuts and cinnamon. In a separate bowl, mix the eggs, vanilla and oil. When both are thoroughly blended, mix them together, adding the pears too.

  4. When the batter is of an even, gooey texture, spoon into a 9 x 13" baking pan and cook at 325 for 60-70 minutes. Make sure the middle is completely cooked through before cooling (this is the hard part). Ultimately the cake should be moist but not wet and oozing. Enjoy!
