Recipe Ingredients for Pear Bran Muffins

1 1/2 c whole-wheat pastry flour
1 c wheat bran
2 T Splenda granular
1 1/4 t cinnamon
1 1/4 t baking soda
1/4 t salt
1 1/4 c low-fat buttermilk
2 large eggs, lightly beaten
3 T canola oil
1 Bosc pear, cored and cut into 1/4 inch dice
1 1/2 t vanilla extract

Recipe Directions for Pear Bran Muffins

  1. Heat oven to 350 F. Lightly coat a muffin tin with baking spray.

  2. Combine flour, bran, sugar substitute, cinnamon, baking soda, and salt in a large mixing bowl.

  3. Combine buttermilk, eggs, oil, pear and vanilla in another bowl.

  4. Make a well in the center of the dry ingredients. Add wet ingredients to dry and mix just to combine; do not overmix.

  5. Divide batter evenly into muffin cups and bake for 20 minutes. Cool and serve.
