A unique, high protein soup. If left thickened, may be used as a sauce for tamales or poultry.

Recipe Ingredients for Peanut Soup

2 tablespoons canola oil
1/2 cup chopped yellow onion
1 pepper hot red chili
1 cup Peanuts, All Types, Dry-roasted
2 cups chicken stock
1/4 cup heavy cream
1/2 cup unsalted butter
1 teaspoon cayenne pepper
2 tablespoons fresh lime juice
1 fresh cilantro for garnish

Recipe Directions for Peanut Soup

  1. In a large, heavy saucepan, heat the oil over medium heat and saute the onion and chile until the onion is translucent, about 3 minutes. Stir in the peanuts and cook, stirring occasionally, until their oil is released, about 30 minutes. Stir in the 2 cups chicken stock, bring to a boil, and simmer over medium heat until the peanuts are tender, 20 - 25 minutes.

  2. In a blender, puree the soup in batches until smooth. Return to the pan and place over low heat. Add the cream and butter and stir until the butter is melted. Add more chicken stock to thin the soup, if you wish. Stir in the cayenne and lime juice. Salt and pepper to taste.
