Noodles with peanut/ginger/sesame sauce

Recipe Ingredients for Peanut Sesame Noodles

1/2 cup smooth peanut butter
1/4 cup soy sauce
1/3 cup water
2 tbsp ginger
1 garlic clove
2 tbsp red wine vinegar
1 1/2 tbsp toasted sesame oil
2 tsp honey
1 tsp hot sauce
1 lb linguine
4 scallions
1 red bell pepper
1 yellow bell pepper
3 tbsp toasted sesame seeds

Recipe Directions for Peanut Sesame Noodles

  1. Purée dressing ingredients in a blender until smooth, about 2 minutes, then transfer to a large bowl.

  2. Cook pasta in a 6- to 8-quart pot of boiling salted water until tender. Drain in a colander, then rinse well under cold water.

  3. Add pasta, scallions, bell peppers, and sesame seeds to dressing, tossing to combine, and serve immediately.
