Peanut Sesame Noodles Recipe

Peanut-sesame noodle recipe from Family Circle magazine. (Changed 04/21/07 because there was just too much peanut butter when we made it!)

Recipe Ingredients for Peanut Sesame noodles

1 lb linguine
1/3 cup natural peanut butter,
1/3 cup chicken broth
1/3 cup water
1/4 cup vinegar, rice
2 tbsp soy sauce
2 tbsp Splenda
2 tbsp sesame oil, Asian dark
2 tsp ginger, chopped
1/2 tsp garlic powder
1/2 tsp red pepper flakes
3 tbsp sesame seeds
2 green onions, sliced

Recipe Directions for Peanut Sesame noodles

  1. Cook linguine according to directions on package, drain, and immediately put into ice water bath. Set aside.

  2. In medium-sized sauce pan, combine peanut butter, chicken broth, water, rice vinegar, soy sauce, sugar, sesame oil, ginger, garlic powder, and red pepper flakes. Whisk until combined. Cook on medium-high heat for about 10 minutes, until thickened. Remove from heat.

  3. While sauce simmers, toast sesame seeds in a nonstick pan over medium heat for 5 minutes, shaking pan to keep from burning.

  4. Drain noodles, discard ice cubes. Toss with 1/2 the dressing and allow to combine for a few minutes. Add remaining dressing and sesame seeds, toss. Top with sliced scallions. Serve cold.

  5. Best if served same day.
