Recipe Ingredients for Peanut noodles and shredded chicken

12 oz boneless, skinless chicken breasts
1/8 cup Peanut Butter,
1 tablespoons reduced-sodium soy sauce
1 teaspoons minced garlic
1/2 teaspoons chile-garlic sauce, or to taste (see Ingredient note)
1/2 teaspoon minced fresh ginger
6 ounces Whole Grain Noodle Style Pasta
9 oz ounce bag fresh vegetable medley, such as carrots, broccoli, snow

Recipe Directions for Peanut noodles and shredded chicken

  1. Boil chicken and vegetables for 10 minutes. Remove chicken to platter to cool

  2. Strain out veggies, reserving 1 cup of the water, in the veggie chicken water boil the pasta until cooked.

  3. Whisk together peanut butter, soy sauce, paste, ginger and garlic

  4. Add water to peanut sauce.

  5. Toss pasta with touch of sesame oil and chill.

  6. When chilled heat skillet and stir fry pasta, veggies and chicken until hot, add peanut sauce and serve.
