You can use any mix of fresh vegetables: leftovers, frozen bags, salad bar extras. Hot sauce should be substituted for asian chile sauce if possible. Serve over rice or whole wheat pasta

Recipe Ingredients for Peanut Noodles with shreddded chicken and vegetables

1 lb chicken breasts, skineless
1/2 c peanut butter, smooth
2 T soy sauce
2 t garlic, minced
1 1/2 t hot sauce
1 t. ginger, minced
8 oz spaghetti, wheat
6 oz broccoli
3 oz carrots
3 oz snow peas

Recipe Directions for Peanut Noodles with shreddded chicken and vegetables

  1. Place chicken in a saucepan, add enough water to cover and bring to a boil. Cover, reduce heat to a simmer and cook until no longer pink in the middle, about 10 minutes. Transfer the chicken to a cutting board. When cool, shred into bite size pieces.

  2. Whhisk peanut butter, soy sauce, garlic, hot sauce and giner in a large bowl.

  3. Cook pasta until not quite tender. Add vegetables to pasta and cook u ntil tender. Drain, reserving 1 c. of watter. Rinse pasta and vegetables with cool water to refresh. Stir reserved cooking water into the peanut sauce; add pasta, vegetables and chicken, toss to coat. Serve warm or chilled.
