Peanut Noodles Recipe

This is a really tasty high-cal dish. It's even better with broccoli or snow peas added to it!

Recipe Ingredients for Peanut Noodles

8 oz. whole wheat pasta or soba noodles
1/2 cup vegetable broth
1 tsp. ground ginger
3 tablespoons peanut butter
3 tablespoons soy sauce
1 1/2 tablespoons honey
1 tsp. chili powder
3 cloves garlic, minced
1 cup peanuts, chopped

Recipe Directions for Peanut Noodles

  1. Bring large pot of water to a boil. Cook pasta according to package instructions. Drain well.

  2. Combine broth, ginger, peanut butter, soy sauce, honey, chili powder and garlic over medium heat.

  3. Stir until everything is melted and peanut butter it smooth.

  4. Toss pasta with the sauce and top with 1/4 cup peanuts on each.
