Peanut butter, lime - sweet, smooth sauce

Recipe Ingredients for Peanut Lime Shrimp & Rice

3 cups brown basmati rice, cooked
19 raw shrimp
4 tablespoons margarine
1 cup chicken broth
1/3 cup peanut butter
2 tablespoons lime juice
3 cloves garlic, sliced
2 tablespoons brown sugar

Recipe Directions for Peanut Lime Shrimp & Rice

  1. Remove tails from shrimp. Put in bowl, sprinkle with salt, add lime juice. Marinate for 10 minutes.

  2. Melt 2 tablespoons margarine in skillet. Add shrimp, lime juice and sliced garlic. Cook until shrimp are done; remove shrimp. Set aside; keep warm.

  3. Add other 2 tablespoons of margarine, chicken broth, peanut butter, and brown sugar. Stir until margarine and peanut butter are melted and ingredients are combined. Cook until sauce thickens, stirring occasionally.

  4. Combine rice, shrimp and and sauce. Serve and enjoy.
