Recipe Ingredients for peanut ginger chicken in Brown Rice

1 cup long grain brown rice
2 cups water
3 tablespoons Peanut Butter Low Fat Smooth
1/3 cup canola oil
1 breast,+bone+and+skin+removed Chicken
1 medium+raw Carrots
1 clove garlic
2 green onions

Recipe Directions for peanut ginger chicken in Brown Rice

  1. bake boneless skinless chicken breast and slice when cooled

  2. cook brown rice

  3. gently sautee 1 clove of garlic, chopped onion and diced carrots; add cooked rice stir, add chicken and seasonings. I use ginger, a dash of curry powder, cayenne pepper, crushed red pepper, and a blend of Sechuan spices. Add three table spoons peanut butter and a very small amount of water as needed.

  4. stir blend and cook on medium low hear for about ten minutes
