Center-cut boneless pork loin cutlets encrusted in crushed peanuts and pan fried in olive oil and butter.

Recipe Ingredients for Peanut encrusted Pork Loin Cutlet

1 1/4 lbs Pork loin
3 oz dry roasted peanuts
1 egg
2 oz unsweetened almond milk
2 tblsp unsalted butter
2 tblsp olive oil

Recipe Directions for Peanut encrusted Pork Loin Cutlet

  1. Crush peanuts in food processor

  2. Pound cutlets with a mallet until approx. 50% bigger in diameter.

  3. Pre-heat a cast iron skillet to medium heat

  4. Dip tenderized cutlets into egg and almond milk wash.

  5. Dredge cutlets in crushed peanuts.

  6. Place 1 tblsp butter and 1 tblsp olive oil in heated skillet, coat bottom od pan.

  7. Place half the cutlets in skillet and brown cutlets on each side until golden brown. About 3 minutes per side depending on thickness of cutlet.

  8. Place cooked cutlets on plate and cover with aluminum foil.

  9. Wipe skillet with paper towel and add remaining butter and olive oil to coat pan.

  10. Pan fry remaining cutlets until golden brown on each side.
