Chicken and peppers in a peanut sauce

Recipe Ingredients for Peanut Chicken Stir-Fry

2 tsp. cornstarch
3/4 cup chicken broth
1/4 cup creamy peanut butter
3 tablespoons soy sauce
1 teaspoon ground ginger
1/4 tsp pepper
1 1/4 pounds boneless skinless chicken breast
3 tablespoons olive oil
1 cup green pepper
1 cup sweet red pepper
1 1/2 cups fresh mushrooms
1 tsp. garlic
1 cup brown rice

Recipe Directions for Peanut Chicken Stir-Fry

  1. In a small bowl, combine the first six ingredients until smooth, set aside.

  2. In a large skillet or wok, stir fry chicken in 1 1/2 teaspoons oil for 3-4 minutes or until no longer pink. Remove with a slotted spoon and keep warm.

  3. Stir fry peppers in remaining oil for 3 minuts. Add mushrooms and garlic, stir fry 3-4 minutes longer or until vegetables are crisp tender.

  4. Stir cornstarch mixture and add to the pan. Bring to a boil, cook and stir for 2 minutes or until thick. Add chicken and heat through. Serve with rice.
