Recipe Ingredients for Peanut chicken and rice

1 tbsp olive oil
344 g chicken breast, skinless, cut into slices
1 medium onion, chopped
3 cloves garlic, crushed
400 g tomatoes, chopped
1/4 cup peanut butter
1 tbsp curry powder
3 cups chicken stock
1 1/2 cups rice
1 pinch thyme
1/2 tsp salt

Recipe Directions for Peanut chicken and rice

  1. Heat the oil in a large saucepan.

  2. Once hot, cook the chicken slices until slightly brown and set aside.

  3. Add the onion and garlic to the pan and cook until soft.

  4. Return the chicken to the pan and add the tomatoes, curry powder, peanut butter and thyme. Stir well to mix in the peanut butter.

  5. Add the chicken stock and bring to the boil. Stir in the rice and salt.

  6. Cover and simmer for 20 minutes or until the liquid has been absorbed. Serve with a salad.
