Pretty tasty veggie burgers that you can make yourself. Good for a BBQ where you know vegetarians may be in attendance

Recipe Ingredients for Peanut Butter Veggie Burgers

4 oz portabella cap, finely chopped
1 medium onion, finely chopped
1 medium red pepper, finely chopped
1 medium carrot, finely chopped
2 cloves garlic, finely chopped
2 large eggs
1/2 cup smooth peanut butter

Recipe Directions for Peanut Butter Veggie Burgers

Stir all ingredients together until fully combined. Form into 4 balls and press into patties. Wrap in plastic wrap and chill ofr at least 30 minutes. Fry or grill patties for 8 minutes per side on medium/high heat.
