Recipe Ingredients for Peanut Butter-Vegetable Soup

3 stalks celery, sliced (1 1/2 cups)
2 medium carrots, chopped (1 cup)
1 large onion, chopped (1cup)
3 cloves garlic, minced
2 tbls butter
3 cups water
1 medium zucchini, sliced (1 cup)
4 tsp instant vegetable or chicken bouillon granules
1/2 tsp pepper
16 ounces tomatoes, cut up
2 tbls snipped parsley
1/2 cup peanut butter

Recipe Directions for Peanut Butter-Vegetable Soup

  1. In large saucepan cook celery, carrots, onion and garlic in butter, covered, about 5 minutes or till onion is tender. Stir in water, potato, zucchini, bouillon granules, and pepper. Bring to a boil, reduce heat. Cover and simmer for ten minutes. Stir in undrained tomatoes and parsley

  2. In small bowl, gradually stir 1 cup broth from pot into peanut butter til smoth. Return mixture to saucepan, Cook until heated through
