The peanut butter adds something wonderful, without really tasing like itself. This is a 1.5 times version of original - quantities can be reduced

Recipe Ingredients for Peanut Butter Vegetable Chicken Soup

12 cups chicken broth, low fat, low sodium
3 cups chicken, white breast diced
1 1/2 cups potato, diced
1 1/2 cups carrot, diced
1 1/2 cups zucchini, diced
1 1/2 cups broccoli florets
1 1/2 cups tomatoes, canned, diced
3/4 cup celery, diced
3/4 cup onion, diced
3/4 cup green pepper, diced
2 cloves garlic
3/4 cup peanut butter
1 tbsp parsley, chopped fresh
1 tsp black pepper
1/8 tsp salt

Recipe Directions for Peanut Butter Vegetable Chicken Soup

  1. In a large stock pot, combine the broth, chicken, potatoes and carrots. Bring the soup to a boil and then reduce heat to medium Cook for about 10 minutes, till vegetables are tender

  2. Add zucchini, broccoli, tomatoes, celery, onion, green pepper and garlic. Simmer for about 8 minutes.

  3. Add peanut butter, parsley, salt and pepper; stir until peanut butter is fully blended. Simmer for three minutes longer.
