high calorie for a mini-muffing. i originally found this recipe online but i upped the oatmeal and peanut butter content. Pop three for 9 grams of protein has a small breakfast when you just don't have time. Usually i make these on a weekly basis so my toddler thinks she is getting a "treat" but its actually a pretty healthy muffin compared to all the packaged items they sell marketed towards children these days!

Recipe Ingredients for Peanut Butter Oatmeal Mini-Muffins

3/4 cup flour
3/4 cup oatmeal
2 tablespoons wheat germ
1 teaspoon baking powder
1/4 teaspoon baking soda
1/3 cup brown sugar
2/3 cup peanut butter
1 egg
1/2 cup milk

Recipe Directions for Peanut Butter Oatmeal Mini-Muffins

  1. Combine Brown Sugar and Peanut butter- blend until smooth.

  3. Combine the rest of the ingredients excluding the egg and milk. Add Peanut Butter mixture until well coated and then add milk and egg till completely smooth.

  4. Add one-two tablespoons of extra milk if necessary.

  5. Bake at 350 for 9-11 minutes- until wooden stick comes out clean.
