Recipe Ingredients for Peanut Butter Oatmeal Cookies

1 1/3 c flour
1 tsp baking powder
3/4 tsp baking soda
1 1/4 tsp cinnamon
1/2 tsp salt
2 c oats
1/2 c canola oil
1/2 c creamy peanut butter
1/2 c sugar
3/4 c dark brown sugar, firmly packed
1/3 c almond milk
4 tsp ground flax seeds
1 1/2 tsp vanilla extract
1 c roasted, salted peanuts, chopped

Recipe Directions for Peanut Butter Oatmeal Cookies

  1. Preheat oven to 350 F. Lightly grease two baking sheets or line with parchment paper.

  2. In a medium-size bowl, sift together flour, baking powder, baking soda, cinnamon, and salt. Stir in the oats and set aside.

  3. In a large bowl, beat together oil, peanut butter, sugar, brown sugar, nondairy milk, flax seeds, and vanilla until smooth. Fold in half of the flour/oat mixture to moisten, then fold in the remaining half.

  4. Place the chopped salted peanuts in a shallow dish. Drop 1 generous, rounded tablespoon of dough per cookie into the peanuts, pressing the nuts into the dough. Move the dough onto the cookie sheets, leaving about 2 inches between each cookie. Flatten slightly.

  5. Bake 12-14 minutes, until the edges just start to brown. Let the cookies rest on the baking sheet for 5 minutes before transferring to wire racks to complete cooling. Store loosely covered.
