Recipe Ingredients for Peanut Butter Oat Muffins

1/2 cup fat free milk
1 teaspoon distilled white vinegar
2 tablespoons peanut butter
1/3 cup applesauce
1 cup rolled oats
3 tablespoons brown sugar
1 tablespoon honey
1 teaspoon vanilla extract
1 tablespoon flax seed meal
3/4 cup whole wheat flour
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt

Recipe Directions for Peanut Butter Oat Muffins

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Combine milk and vinegar. Let stand for about 5 minutes to thicken.

  3. In a large bowl, stir together the peanut butter, applesauce, sugar, honey, oats, vanilla and flaxseed meal. Mix in the milk.

  4. Combine the flour, baking powder, baking soda and salt; stir into the batter just until blended. Spoon the batter into greased 6 cup muffin pan.

  5. Bake for 30 minutes.
