Recipe Ingredients for peanut butter noodles

8 oz whole wheat spaghetti
1/2 cup vegetable broth
1 tsp ginger powder
3 T peanut butter
3 T soy sauce
1 1/2 T agave syrup
1/2 T chopped garlic
12 oz extra firm tofu
2 medium zucchini, chopped
4 eggs, scrambled
3 oz portabella mushrooms

Recipe Directions for peanut butter noodles

  1. prepare noodles according to directions, set aside.

  2. in a saucepan, combine broth, PB, soy sauce, ginger, sweetener, garlic & chile pepper flakes

  3. melt all the ingredients together and bring to a slight boil

  4. meanwhile, saute veggies and tofu and until light brown and veggies are softened

  5. scramble eggs add noodles, tofu, veggies and eggs to the sauce. mix really well.

  6. garnish with crushed peanuts & serve!
