Delicious, with a texture between cookie & muffin. my first try at these cookies; would be better with nuts, whole wheat flour, maybe more oats & less butter, maybe ginger, maybe less sugar

Recipe Ingredients for Peanut Butter Molasses Oatmeal Cookies

1 cup unsalted butter
1 1/2 cups granulated sugar
3 tbsp molasses
1/3 cup molasses
1/3 cup peanut butter
2 large eggs
1 1/2 tsp vanilla extract
1 1/2 cups all-purpose flour or whole wheat flour
1 cup all-purpose flour
1 cup rolled oats or toasted wheat germ
1 1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
2 cups rolled oats
1/4 tsp ground ginger or 1 cup raisins or 1 cup chopped nuts

Recipe Directions for Peanut Butter Molasses Oatmeal Cookies

  1. Cream butter, sugar, molasses & peanut butter in large bowl.

  2. Blend in eggs & vanilla.

  3. Mix flour, wheat germ, baking soda, salt, & cinnamon in separate bowl.

  4. Stir dry ingredients into creamed mixture until evenly blended.

  5. Stir in the oats, raisins, & nuts.

  6. Cover & refrigerate for 1 hour.

  7. Preheat oven to 350 degrees F.

  8. Grease cookie sheets.

  9. Shape dough by 1/4 cup into large balls. Place each ball on greased cookie sheet, leaving 1-3" between them. Flatten slightly.

  10. Bake for 15-18 minutes; when done, the tops will still be soft to the touch.

  11. Cool on the sheets for 5 minutes, then transfer to a rack to cool.
