A huge cheat cake ... but a small sliver of cake goes a long way. It's the perfect comfort food for those really bad days if you can allot the calories for it.

Recipe Ingredients for Peanut Butter Meltaway Cake

1 c. butter
1/4 c. cocoa
2 eggs
1 c. water
1/2 c. buttermilk
2 c. sugar
2 c. flour
1 tsp. baking soda
1 tsp. vanilla
3/4 c. peanut butter
3/4 tbsp. oil
1/2 c. butter
1/4 c. cocoa powder
1 pound confectioners' sugar
6 tsp. buttermilk

Recipe Directions for Peanut Butter Meltaway Cake

  1. Cake: Combine butter, cocoa, eggs, water and buttermilk in saucepan and stir over low heat. Remove from heat and stir in sugar, flour, baking soda and vanilla. Beat until smooth. Pour into greased cake pan (I use 8"x12" and cut 2"x2" for each serving). Bake 30 minutes at 350 degrees. Let cool completely.

  2. Peanut Butter Topping: Combine 3/4 cup peanut butter and 3/4 tablespoon oil. Spread over cake and refrigerate for 20 minutes.

  3. Chocolate Topping: Heat 1/2 cup butter and 1/4 cup cocoa until bubbles. Add 1 teaspoon vanilla, 1 pound 10X sugar and 6 teaspoons buttermilk. Spread over peanut butter and cool.
