Recipe Ingredients for Peanut Butter Marble Cake

2 1/4 cups all purpose flour
3/4 cups sugar
1/2 cups honey
1/2 cup chunky peanut butter (Adams)
1 1/4 cups nonfat milk
3 1/2 tsp baking powder
1 tsp salt
1 tsp vanilla
3 large eggs
3 tbsp cocoa
1/8 tsp baking soda

Recipe Directions for Peanut Butter Marble Cake

  1. Heat oven to 350. Grease bottom and sides of rectangular pan, 13x9x2, 2 round pans, 9x1 1/2, or 3 round pans, 8x1 1/2 inches with Pam, lightly flour.

  2. Beat all ingredients, except cocoa and baking soda, with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. (with honey substituting for some of the sugar in the original recipe, I found I had to beat it by hand a little longer just to make sure the honey was evenly distributed.)

  3. Pour 2/3 of the batter (about 3 cups) into pan(s). Stir the baking cocoa and baking soda into the remaining batter. Drop chocolate batter by generous tablespoonfuls randomly in mounds onto peanut butter batter. Pull knife through batters in S-shaped curves in one continuous motion for marbled design. Turn pan 1/4 turn; repeat marbling.

  4. Bake rectangle 40-45 min, 9-inch rounds 30-35 min, 8-inch rounds 20-25 min. or until toothpick inserted in center comes out clean or until cake springs back when touched lightly in center. Cool rectangle in pan on wire rack. Cool rounds 10 minutes; remove from pans to wire rack. Cool completely.

  5. This recipe doesn't include any frosting.
