All the goodness of a PB&J, baked into a muffin, and for fewer calories than your standard sammich!

Recipe Ingredients for Peanut Butter & Jelly Muffins

2 cups whole wheat flour
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1 cup 1% milk
2 eggs
1/3 cup brown sugar
1/3 cup Splenda
1/2 cup unsweetened applesauce
200 grams Simply Jif peanut butter
100 grams almond butter
160 grams sugar free raspberry preserves
30 grams strawberry preserves
1 tbsp lime juice
10 grams honey

Recipe Directions for Peanut Butter & Jelly Muffins

  1. Preheat oven to 375 degrees F.

  2. Place cupcake papers in muffin tin cups.

  3. In a large mixing bowl, combine flour, baking powder, baking soda, salt, and cinnamon.

  4. Make a well in the middle of the dry ingredients, then pour in the milk, eggs, sugar, Splenda, applesauce, peanut butter, and almond butter. Stir until PB and AB are blended, but don't over-stir.

  5. In a separate mixing bowl, combine preserves (both), lime juice, and honey.

  6. Fill muffin papers half-way with batter, making a small well in the center if you can.

  7. Add a spoonful of preserves onto batter.

  8. Cover preserves with remaining batter.

  9. Bake muffins for 20 minutes, or until peaks are golden brown.

  10. Cool for 5 minutes before removing from pan. If the preserves ooze out and stick to the muffin pan, run a knife along the outer rim of the muffin. Use a butterknife to lift the muffins out of the pan.

  11. Cool another 5 minutes before eating.
