Recipe Ingredients for Peanut Butter Granola Bars

1/4 cup Brown Rice Flour
1/2 cup Almond Meal
1/2 cup Coconut Flakes
1/2 cup Old Fashioned Oats
1 tablespoon Sesame Seeds
1/4 teaspoon Salt
2 tablespoons Peanut Butter
1 tablespoon Molasses
1 tablespoon Maple Syrup
1 teaspoon vanilla

Recipe Directions for Peanut Butter Granola Bars

  1. Preheat oven to 275 degrees.

  2. In a mixing bowl mix together dry ingredients; rice flour, almond meal, coconut flakes, oats, sesame seeds and salt. Then add the wet; peanut butter, molasses, maple syrup and vanilla. Start mixing the wet and dry together with a spoon as best you can. Then, with greased hands, incorporate using your hands. After you have it mixed together, pour into a 9 X 9 square pan and pat ingredients down with your hands covering the bottom of the pan. Place into oven and bake 20 minutes or until edges are golden brown. Take out of oven and let cool for at least 30 minutes. This allows them to crisp up. Cut into 8 bars.

  4. If you don't have almond meal you can make your own by putting blanched slivered almonds in a food processor for about a minute and a 1/2. I don't recommend replacing the rice flour with regular flour. The rice flour is the key ingredient in this recipe, to give it that wonderful crunch and course texture.
