AWESOME dessert. Kids love this. Taken from Paula Dean's recipe on FoodNetwork.com. The recipe is Tyler Florence's peanut butter frosting recipe. I couldn't quite get 24 cupcakes out of the recipe.

Recipe Ingredients for Peanut Butter Cupcakes w/Peanut Butter Frosting

1 cup all-purpose flour
1 cup sugar
2 tbsp sugar
3 1/2 tsp baking powder
1 tsp salt
2 cups graham cracker crumbs
1 cup Peanut butter
1/4 cup shortening
1 cup skim milk
2 tbsp skim milk
1 tsp vanilla extract
3 eggs
1/4 cup margarine, at room temperature
1/2 cup smooth peanut butter
3 ounce cream cheese, at room temperature
2 cups confectioners' sugar
1 tbsp skim milk
3 pkg Reese's Peanut Butter Cups, chopped

Recipe Directions for Peanut Butter Cupcakes w/Peanut Butter Frosting

  1. Preheat oven to 375 degrees F if baking with a metal dish; 325 degrees F if using a glass dish.

  2. Sift flour, sugar, baking powder, and salt together.

  3. Add graham cracker crumbs, peanut butter, shortening, milk, and vanilla. Beat mixture with electric mixer on low until moistened, and then beat on medium for 2 minutes. Add eggs and beat for 1 minute.

  4. Line a cupcake pan with papers and lightly spray with PAM. Put batter in each cup to 3/4 full. Bake for approx. 20 minutes.

  5. For Frosting: Beat the butter, peanut butter, and cream cheese with a hand or standing mixer on medium speed, until light and fluffy. Slowly add the confectioner's sugar and continue to mix until the frosting is smooth, mix in the milk and continue to mix until it reaches a good spreading consisting.

  6. Frost each cupcake and top with chopped up Reese's Peanut Butter Cups.
