A VERY peanut-buttery cookie that's eggless and (relatively) lower in sugar... for those who love the taste of peanut butter!

Recipe Ingredients for Peanut Butter Cookies

2 oz. (1/4 cup) applesauce
3/4 cup sugar
1 T. golden flaxseed meal + 3 T. water (set it aside for 10 min to form an egg replacement)
1 cup chunky peanut butter
3/4 cup flour
1 teaspoon cinnamon
1/2 teaspoon baking soda
2 T. skim milk
1/3 cup old fashioned oats
1 T. golden flaxseed meal

Recipe Directions for Peanut Butter Cookies

  1. Preheat oven to 350 degrees F (180 degrees C).

  2. Cream sugar and applesauce, beat in flaxseed-water mixture.

  3. In a separate bowl, sift together flour, baking powder, and cinnamon. Stir into batter. Add milk slowly until the batter is the right consistency. Add oats and one tablespoon of flaxseed meal, mix until incorporated. Put batter in refrigerator for 20 min. (You could also put it in the freezer for about 10 min.)

  4. Drop by teaspoonfuls onto lightly creased baking sheets. Flatten each ball with a fork, making a criss-cross pattern. Bake in a preheated 350 degrees F oven for about 10 minutes or until cookies begin to brown. Do not over-bake. *Makes 60 cookies total, 4 cookies per serving.
