Great recipe. Replace both brown and regular sugars with 1 1/4 cup fructose (fruit sugar) for diabetic safe cookies. :)

Recipe Ingredients for Peanut Butter Cookies

1 1/2 cups all purpose flour
3/4 teaspoon baking soda
1/2 cup butter
1/2 cup brown sugar
1/2 cup sugar
2 eggs
1 1/2 cups chunky peanut butter
2 teaspoons vanilla

Recipe Directions for Peanut Butter Cookies

  1. Preheat oven to 350 degrees F.

  2. Spay cookie sheet with pam and set aside.

  3. Blend flour and baking soda in a bowl and set aside.

  4. In a new bowl beat butter and sugar(s) together until creamy.

  5. beat in eggs, peanut butter, and vanilla.

  6. Add flour and baking soda and blend well.

  7. Roll dough into balls and roll through sugar if desired.

  8. Place on cookie sheet and press down with fork.

  9. bake 12-15 minutes or untill firm and edges are lightly browned.
