Vegan peanut butter cookies with lots of protein. Very very rich. Adapted from a flour free recipe that used eggs. Instead of eggs I use the flour mixture.

Recipe Ingredients for Peanut butter cookies

1 cup organic peanut butter
1 cup organic brown sugar
40 g soy protein powder
1/2 teaspoon vanilla extract
1/4 cup whole wheat flour
1/4 cup soymilk
1 teaspoon baking powder
1 teaspoon vegetable oil

Recipe Directions for Peanut butter cookies

  1. Mix together PB, sugar, protein and vanilla.

  2. In a separate bowl, mix flour, milk, baking powder, and oil with a fork. Let sit for a moment and then fold into other bowl.

  3. Bake at 375 until done.
