Sugar free delicious little tender gems. Lots of healthy fats, delicious with a hot tea or coffee. One is plenty.

Recipe Ingredients for Peanut Butter Coconut Cookies

1 cup natural peanut butter
16 oz unsweetened flaked coconut
1 egg
1/2 cup Splenda No Calorie Sweetener

Recipe Directions for Peanut Butter Coconut Cookies

Prehead oven to 350 and spritz a cookie sheet with nonstick spray. Combine pb and coconut in a bowl and mix well. Stir in egg and Splenda until thoroughly mixed. Drop by teaspoonful onto baking sheet and flatten slightly (mine did not spread out much). Bake 10-12 minutes. Allow to cool on the cookie sheet for a few minutes before moving, they're kind of soft.
