Recipe Ingredients for Peanut Butter & Chocolate Baked Oatmeal

3 1/2 cups rolled oats
1/2 cup brown sugar
2 tsp baking powder
3/4 tsp salt
1 cup milk
2 tbsp butter, melted
2 eggs
1 tbsp vanilla
1 cup peanut butter
3/4 cup chocolate chips

Recipe Directions for Peanut Butter & Chocolate Baked Oatmeal

  1. Preheat oven to 350 degrees. Grease a 9 x 13 baking dish (or two 8x8 dishes).

  2. In large bowl, mix together with dry ingredients (start with only 3 cups of oats). You can mix by hand to break up teh brown sugar more easily.

  3. In another bowl, stir together the dry ingredients and stir well.

  4. Stir in the peanut butter. If the mixture is very wet, add more oats.

  5. Stir in the chocolate chips.

  6. Spread the mixture into your pan(s) and sprinkle with some extra chocolate chips, if desired.

  7. Bake for 30 minutes until center is firm and the edges are slightly browned.
