0.75 cup White Whole Wheat Flour
0.75 cup dry Old Fashioned Quaker Oats
1 tbsp Organic Raw Mesquite Powder
2.5 tsp Baking Powder
0.25 tsp Baking Soda
1/4 tsp Sea Salt
3 heaping tbsp Powder Soy Protein
1 tbsp Milled Flax Seed
0.5 tsp Cinnamon, Ground
3 large Egg, White
0.5 cup Milk, Nonfat, Fluid
4 tbsp Blue Agave
0.5 cup, mashed Bananas
1.5 tbsp Peanut Butter Spread
1.5 tbsp Light Buttery Spread with Flax Oil

Recipe Directions for Peanut Butter Banana Protein Muffins

  1. Preheat oven to 400 degrees. Spray muffin pan. Melt smart balance in microwave oven. Add peanut butter and stir til well blended.

  2. In large bowl, stir flour, oats, soy protein, baking powder, baking soda, salt, cinnamon, mesquite powder and flax meal together.

  3. Mash bananas then add the egg whites, milk, melted smart balance light mixture and agave until well blended.

  4. Add the wet to the dry and mix just until moistened. Divide between 12 muffin cups.

  5. Bake for 18-20 minutes.
