Recipe Ingredients for Peanut Butter Banana Oatmeal Cookies

1/2 cup white flour
1/2 tsp baking soda
3 tbsp plain nonfat yogurt
1/8 tsp salt
1 tbsp smart balance butter
1/2 cup brown sugar
1/3 cup mashed banana
1 egg white
3/4 cup quick oatmeal
1/4 cup smooth peanut butter
1/4 cup brown sugar
1/4 cup sugar

Recipe Directions for Peanut Butter Banana Oatmeal Cookies

  1. Preheat oven to 350f

  2. grease oven pan with nonstick spray

  3. Stir flour, baking soda and salt in medium bowl

  4. Blend sugars and softened butter in large bowl

  5. Add peanut butter, egg white and mashed banana to sugar mix

  6. Add wet mix to dry mix

  7. Add yogurt

  8. Stir in oats

  9. Dough should be "pourable" but not too runny. Add more oats and flour so that dough can be dropped onto pan without dripping everywhere, but enough hold so that the cookies have some height

  10. Dough will keep it's shape for the most part as it bakes, so lightly press with a spoon if the dropped dough isn't the shape you are looking for.

  11. Bake for 10-14 minutes, or until edges begin to show signs of being "golden". You should be able to check the bottoms with a spatula without the cookies falling apart.
