Recipe Ingredients for Peanut butter and banana cake

4 medium bananas
1/2 cup peanut butter
1/3 cup honey
2 large eggs
2 tsp vanilla extract
1 1/2 cup flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/4 tsp cinnamon

Recipe Directions for Peanut butter and banana cake

  1. Pre-heat oven to 350 degrees F. Line a 8 or 9-inch cake pan with greased parchment.

  2. Mix the wet ingredients in a bowl:

  3. 4 ripe medium bananas, mashed

  4. 1/2 cup organic natural peanut butter or sunflower seed butter

  5. 1/4 to 1/3 cup organic agave nectar or honey

  6. 2 organic free-range large eggs

  7. 2 teaspoons bourbon vanilla extract

  8. Whisk the dry ingredients together first, then beat into the wet mixture till smooth:

  9. 1/2 cup coconut flour

  10. 1 cup fine almond meal

  11. Dash of stevia powder, to taste

  12. Dash of cinnamon or nutmeg, to taste

  13. 1 teaspoon baking soda

  14. 1 teaspoon baking powder

  15. 1/4 teaspoon salt [if using salt-free peanut butter]

  16. Pour the batter into the prepared cake pan and place in the center of the pre-heated oven.

  17. Bake until done - about 35 to 40 minutes - and a wooden pick inserted into the center emerges clean. Mine baked perfectly at 37 minutes [remember I'm at high altitude, so your baking time may vary].

  18. Cool on a wire rack before slicing and serving.

  19. Makes 8 to 9 servings. Freezes well, pieces wrapped individually. Yummy cold.
