Recipe Ingredients for Peanut Butter Apple Breakfast Bread Pudding

6 slices 137g Whole Wheat bread
122 g Egg Beaters
120 g Silk Light Soy milk
101 g (1/2 cup) Sugar
121 3/5 g Peanut Butter
320 g (3) Granny Smith Apples
1 tsp Vanilla Extract
1 tsp Ground Cinnamon

Recipe Directions for Peanut Butter Apple Breakfast Bread Pudding

  1. Heat oven to 350F.

  2. Spray an 8 x 8-inch baking pan with non-stick cooking spray.

  3. Break eggs into a large bowl; whisk until well combined.

  4. Add milk, sugar, vanilla and cinnamon; whisk until well combined.

  5. Add peanut butter; whisk until well mixed.

  6. Cut or tear bread into 1-inch squares and add to bowl.

  7. Add apples and gently stir to mix well.

  8. Pour bread mixture into prepared baking pan.

  9. Bake until the mixture is set and the top is golden brown (about 25 minutes).

  10. Remove from oven and place on a baking rack to cool.

  11. Serve warm.
