Recipe Ingredients for Peanut Brittle

1 1/2 tsp Baking Soda
1 tsp Vanilla Extract
1 tsp Water
1 1/2 cup Sugars, Granulated
1 cup (8 fl oz) Water
1 cup Syrups, Corn, Light
3 tbsp Original Spread
16 oz Party Peanuts

Recipe Directions for Peanut Brittle

  1. Heat oven to 200 degrees. Cover 2 cookie sheets with foil and grease with butter. Place in oven to warm. Grease long metal spatula with butter also.

  2. Combine soda, 1 tsp of water, and vanilla. Set aside.

  3. Mix sugar, 1c water & corn syrup in a 3 qt pan. Cook over medium temp to 240 degrees on candy thermometer.

  4. Stir in butter and pnuts. Cook, stirring constantly to 300 degrees. (WATCH CAREFULLY FOR BURNING)

  5. Immediately remove from heat. Quick stir soda mix into peanut mix - it will steam and foam. Pour onto hot baking sheets and spread.

  6. Cool completely, at least an hour, and break into pieces.
