Golden brown, crisp, peanut brittle. Better than store bought any day! Makes a wonderful gift for the holidays.

Recipe Ingredients for Peanut Brittle

2 teaspoon vanilla extract
3 1/4 cup roasted peanuts, unsalted
1 cup sugar
1/4 cup light corn syrup
1 tablespoon light corn syrup
1 1/4 cup unsalted butter, cubed
1/4 cup honey
2 teaspoon salt

Recipe Directions for Peanut Brittle

  1. Stir in all ingredients and bring to boil. Cook until color of caramel or until approximately 340 degrees F.

  2. Spread out on parchment paper sprayed with nonstick cooking spray. Lay another sprayed sheet of parchment paper over top and use rolling pin to roll out until 1/8 thick (or the thickness of the peanuts)

  3. Allow to cool and break apart. Store in airtight container with parchment paper between layers of peanut brittle.
