Recipe Ingredients for Peanut Apple Salad

1 1/2 cups (12 ounces) plain yogurt
3 tablespoons honey
1/2 teaspoon salt
1/8 teaspoon pepper
3 large red apples, chopped
22 ounces (2-11 ounce cans) mandarin oranges, drained
3 stalks celery, finely chopped
3 medium carrots, shredded
1 1/2 cups dry roasted peanuts

Recipe Directions for Peanut Apple Salad

In a bowl, combine the yogurt, honey, salt and pepper. Add the fruit, vegetables and nuts; gently stir to coat. Cover and refrigerate until serving. Serve in a lettuce-lined bowl if desired.
