PEACHY OAT BRAN MUFFINS.......CAN USE OAT OR WHEAT

Recipe Ingredients for peachy oat bran muffins

375 ml (1 1/2 cups) of wheat bran
166 ml (2/3 cup) flour
166 ml (2/3 cup) firmly packed brown sugar
10 ml (2 tsp.) baking powder
5 ml (1 tsp.) cinnamon
2 ml (1/2 tsp.) salt
187 ml (3/4 cup) skim milk
1 egg,
62 ml (1/4 cup) apple sauce
1/4 cup raisins
398 ml peaches

Recipe Directions for peachy oat bran muffins

  1. 1. Combine oat bran, flour, sugar, baking powder, cinnamon and salt; mix well.

  2. 2. Combine skim milk, egg or egg whites and applesauce. Add to dry ingredients; stir just enough to blend. Fold in fruit and raisins.

  3. 3. Fill greased muffin pans to top. Bake at 220C, 20 to 25 minutes or until golden brown.
