Colorful 2 pot meal. The meat mixture makes wonderful fajita filling with beans, guacamole, and the onions and peppers. You can use whatever salsa you like best, and can substitite shrimp or other meat for the chicken, and pears, mandarine oranges and pineaple for the fruit.

Recipe Ingredients for Peach picante chicken

1 c instant brown rice
1 c water
2 tbsp olive oil
1 medium green pepper
1 medium red onion
1 c chicken
1 c salsa
15 oz peaches (fresh cut into bite sized pieces or canned lite drained)
1 tbsp low sodium taco seasoning mix

Recipe Directions for Peach picante chicken

  1. Make instant brown rice per directions.

  2. Toss chicken in taco seasoning (Save the rest of the packet for another day)

  3. Add oil to skillet on high, once it shimmers saute slivered onions and peppers till they begin to soften and brown on the edges. Remove to a bowl.

  4. Add chicken to same skillet and brown it in the remaining oil--dont worry if it sticks a bit.

  5. Add remaining ingredients to skillet on meduim high heat, stir until contents bubble and all the brown and stuck bits of chicken are free from the bottom of the pan, turn to low, cover, and simmer til liquid is reduced by at least half (about 15 min).

  6. Serve chicken over rice and top with peppers and onions.
