Recipe Ingredients for Peach-Nut Muffins

2 eggs
1 cup apple sauce
2 cups flour
1/2 tsp baking soda
1 cup yogurt
1 cup sugar
1/2 tsp vanilla
1/2 tsp salt
1/2 tsp cinnamon
2 tsp baking powder
1/2 cup walnuts, chopped
1 cup canned peaches, diced

Recipe Directions for Peach-Nut Muffins

  1. Beat eggs; add sugar and gradually add in apple sauce. Add vanilla.

  2. Combine dry ingredients, and add alternating with yogurt into egg mixture.

  3. Fold in peaches (or any other muffin-friendly fruit, cut into small pieces) and nuts.

  4. Bake at 400 degrees; 30 minutes for regular muffins, 20 minutes for mini muffins.
